Which ereader allows me to copy and save sentences and paragraphes

I take highlights notes on almost everything that I read and save them into doc files.

My Nook doesn’t allow me to do this and that is the 1st generation, obviously too old. Therefore I want to get a new one.

So my question is which ereader would allow me do to this?

Notice, I don’t want a tablet, just an eReader.

No doubt that Kindle would be your best choice. All the highlights and notes you take on Kindle will save in a txt file called “My Clippings”, you can easily find it in Kindle’s storage.
